What kinds of things are you looking for? Dinners? Desserts?

I would invest in a weightwatchers cookbook. I have quite a few, plus an online subscription (i'm a member). The recipes are really good and you don't need to follow their program to enjoy them. FH, my brother, my father (all who hate 'diet' food) always love what I cook and would never know it was 'healthy.'
WW hearty turkey chili is a crowd favorite and their two cheees vegetable lasagna. Sorry, I don't have the recipes on hand, but definitely browse the book store for some of their cookbooks.

Sassy meatloaf... so simple and I am actually making it tonight
Its a weight watcher recipe
1 lb to 2 1/2 (depending on who is eating lol )Chopped meat 93% 7% fat
jar of salsa (med size in any flavor you like)
instant oatmeal package (1 lb or less 1 packages and 2 packages for 2 lbs and up)
Mix and heat 350 for one hour

You can add chopped carrots or mushrooms too. They were in the original recipe but I've excluded them and it's still yummy.

You know what I do that's cheap, easy and yummy... pick up a rotiserie chicken, rip up the white meat (no skin) and throw it in a salad with lettuce, tomatoes, cucumber, etc. You can even add whole wheat pasta to it and it's a complete meal. So good and fills you up. Plus, it has the protein and veggies you need. Add a balsamic dressing and anything else to jazz it up.

wow!! that sounds so good!! and easy to make too!!

my downfall is healthy lunches, snacks and desserts -- I'm usually fine with breakfast and dinners.

Re: any good DIET recipes to share??

Here is one of my favorite salads to make:

Mediteranean Bean Salad

INGREDIENTS
1 (15.5 ounce) can garbanzo beans, drained
1 (15 ounce) can kidney beans, drained
1 lemon, zested and juiced
1 medium tomato, chopped
1/4 cup chopped red onion
1/2 cup chopped fresh parsley
1 teaspoon capers, rinsed and drained
3 tablespoons extra virgin olive oil
1/2 teaspoon salt, or to taste

DIRECTIONS
In a large bowl, stir together the garbanzo beans, kidney beans, lemon juice and zest, tomato, onion, parsley, capers, olive oil and salt. Cover, and refrigerate for about 2 hours, stirring occasionally, before serving.

It can also be easily adapted to a Tex-Mex style by changing the lemon to lime, parsley to cilantro and adding ground cumin and/or chili powder! Be sure to add the lemon zest (or lime zest) as this really adds a ZING to the salad!'

It's sooo good. With the wedding right around the corner I've been in no mood to make dinner so this was one of the dinners I tried (saw it done on the Food Network once.. )

You make a lot of it and you can have it as a dinner, lunch, snack, etc and lots of leftovers.

FH came up with a variation of chicken coated in breadcrumbs. He coats the chicken in oatmeal and bakes it with an orange slice on top. It's healthier and I think it actually tastes better than frying it or using bread crumbs! Add some rice and veggies or a potato and it's really filling!

Re: any good DIET recipes to share??

love that chicken recipe... but I'd avoid supermarket chickens and roast your own. those are sooo moist... I'm suspicious I know they inject them with flavored solutions prior to roasting... but are they low cal broths, or oily / tasty stuff that rockets up the calories? All I know is that I'm COVERED with grease after eating one!

If anyone out there knows for sure, please let me know!

I have another low cal recipe... pseudo fajitas...! we always make a huge batch and eat it for several days

Fry in very little oil (and ideally an iron skillet, and each one at a time, so everything gets caramelized and golden, and doesn't steam) 2 pks of sliced mushrooms... put in bowl... then fry one huge onion-chopped... put in mushroom bowl, then 3 huge peppers, chopped... then put in veg bowl, then 1 large can of (wahsed&drained) black beans.... add a little oil... cook until beans are a bit dryer and warm.... transfer to veg bowl. Then add 1.2 lbs of LEAN ground sirloin (no added oil), 2T ground cumin, 1T oregano, and 1/2T ground corriander, and one of those small cans of plain tomato sauce. Salt to taste. Once meat is cooked, put in veg bowl, and mix everything up. garnish with low fat grated cheddar... can also eat with a bit of guacamole (low fat sourcream only!)
You can eat it with or without a tortilla! (Fry tortilla in hot / dry pan before using!)
