I make a spinach and feta cheese filling and I roll tipapia like logs. You can do anything with them that you do with flounder of filet of sole.

I put a cococut panko (asian bread crumb) on them last night.

Do you use oil or butter to get a crispy panko coating?

I used oil and butter. I posted a bunch of pics on my review. Thanks for the compliment.

There are some good Tilapia recipes on allrecipes.com. I especially like the one with olives and capers. My husband and I are big Tilapia fans.

Re: Any Tilapia recipes???

I made Sesame Tilapia last night. It was really good...but DH wasn't thrilled...he just likes it fried.

INGREDIENTS:
2 (4 ounce) fillets tilapia
1/4 cup sesame oil
1 clove garlic, minced
1 teaspoon Italian seasoning
kosher salt to taste
fresh ground black pepper to taste

--------------------------------------------------------------------------------

DIRECTIONS:
Place the tilapia in a bowl, and drizzle with the sesame oil. Season with the garlic, Italian seasoning, kosher salt, and pepper. Cover, and marinate at least 30 minutes in the refrigerator.
Preheat oven to 350 degrees F (175 degrees C).
Transfer the tilapia and marinade to a baking dish, and bake 30 minutes in the preheated oven, until fish is easily flaked with a fork.
