I have a harp, cello & flute for my ceremony. There is a piece of music I really like that was written as a piano solo. Will they be able to play it, or do I need to choose a piece that is written for multiple pieces?

I'm a musician You should talk to the people you are hiring - some offer arranging services so that they can adjust your music to play with that specific group. Many musicians are able to make accomodations for these requests as long as they are given enough notice. If that doesn't work FM me and I will see what I can do for you. The combination of instruments you have is very easy to work with.
