Here is one of my favs

Rack of Lamb with Camelized Shallots and Thyme Crust

1 1/2 tbsp olive oil
3 large shallots chopped
3 tbsps balsamic vinegar
1/4 cup bread crumbs
1 1/2 tbsp chopped fresh thyme or 2 tsp dried
1 rack of lamb frenched (trimmed of excess fat)
1 tsp dijon mustard
1 tbsp vegetable oil

Preheat oven to 400

In a small skillet heat olive oil over moderate heat until hot, add shallots with salt and pepper, stirring until shallots are golden brown. Add vinegar and boil until liquid is gone. Remove from heat and add breadcrumbs and thyme. Season with S&P to taste

Season lamb with S&P. Heat vegetable in a saute pan and sear lamb on all sides. Transfer (rib side down) to a small roasting pan. Spread meat side with mustard and pat on breadcrumb mixtures. Roast lamb in oven for about 25 to 30 minutes for medium rare.

Transfer lamb to cutting board and let rest for 10 minutes, slice into chops.

Enjoy!

2 tsp freshly grated lemon zest
2 tsp drained capers

Season lamb with S&P and broil approx 4 minutes per side for med rare. Meanwhile addd remaining ingredients in a saucepan over medium heat. To serve pour sauce over lamb.

I like them best very simple. Just rub with some extra virgin olive oil, salt, pepper and rosemary...them throw them in the oven.
