I need a good easy chicken recipe? Anyone have a good one?\


Im cooking dinner for my fh and i always make the same ****...chicken franciese...chick parm...chicken marsala!!!

buy a packet of stir fry sauce and cut up some veggies! I love that....

I also just made chicken caccitore the other night and it was very good....a one pot meal!

i made this the other night and DH loved it!!!

I put a can of stewed tomatoes in a deep frying pan, added a canful of water, threw some chicken cutlets on top of that, threw some cut up brocolli and cauliflower on top of the chicken, and then topped each off with a slice of mozarella cheese....covered and cooked for about an hour or so...until it looked done.

it works well with spinach instead of the brocolli and cauliflower also (DH hates spinach)

2 Chicken Breasts with skin
1/2 lemon cut in half
olive oil
rosemary or thyme (which ever you like better)
small red onion (quartered)
salt & pepper

Place chicken in zip lock bag squeeze lemon juice over and throw in bag with red onion, herb of choice and olive oil. Season with some salt & pepper. Marinate 20 minutes to all day. Heat oven to 425 place chicken on a baking sheet/dish with the contents of the ziplock bag. Roast 35 minutes. Serve chicken with the roasted onions and sides of your choice.

Place chicken in a dish and squeeze in a favorite salad dressing to coat .. cover with foil .. poke a few holes in the foil .. bake at 325 til done .. I generally give it about 1 hour .. less if you're doing boneless.

Dressings we've tried and loved:

Wishbone Just 2 Good Italian
Wishbone Just 2 Good Red Wine Vinegrette

Chicken Catalina

It is really easy take chicken cutlets and marinate them with catalina dressing (also put catalina dressing in the pan )
bake them for 25 min on each side 350 degrees

I make rice with it also and dip my rice in the dressing
it is so yummy
i use the fat free dressing

I just made a good one the other night and it was so easy! Just brown your chicken in a pan. Then add a can of cream of chicken soup (i use the reduced fat) and a package of knor vegetable soup mix. Bring it to a boil, then simmer so the vegetables soften. Then serve it over rice (i used the minute rice to save time). FH loved it!!! It only takes about 20-30 minutes to cook, too!

THis is a very, very difficult recipe.

Brown chicken- say 90-95% cooked.
Add sasla
Cook fully
Serve over rice

Cut 4 chicken breasts into 2 inch strips, cut 2 red peppers and a whole onion into 2 inch strips, chop 2 cloves of garlic. Stir fry the peppers, onion and garlic in oil until soft, then add chicken. Once chicken is cooked, add a can of tomato sauce and let simmer, covered for about 10 min. Serve over rice. YUM!!!

If you like spicy food this is a good stir fry.

This is mostly done to taste it is a spin on a gourmet recipe.

Cook the chicken with some garlic and lemon juice.

Add in any veggies you like:
I use - broccoli, onions, mushrooms and waterchest nuts.

As this is cooking - add in:

Soy sauce
Worcester sauce
Tobasco
Chili powder
Crushed red peppers
if you need it more lemon juice

(You don't need much of the above I do it to taste since some people perfer one stronger than another.)

You can put this over Rice or noodles IF you eat them - I just make plenty of veggies and it plain.

The above recipe can be subsituted with shrimp rather than chicken



I also like a Rosemary rub - This also works for steak or pork:

In a bowl - mix minced garlic, EVOO, fresh rosemary, Lemon Zest, salt and pepper -

Just rub it onto the chicken and grill it on a grill pan if you have one. or cook as you normally would - You need very little of the rub as it is rather strong

I made the other night an eggplant chicken casserole...from memory it was
slice an eggplant...broil for about 3 minutes on each side. Put some parmesan cheese and some garlic powder while broiling.
Meanshile cook chicken ( cut up) in a pan with some more garlic and a small little can of tomato sauce.
In a casserole sih place half of the eggplant slices...top with chicken mixture( seasoned how ever you like)
Top with rest of eggplant slices and top with mozzerela cheese. BAke at 375 for about 20-30 minutes.

It came out great!

I made this last week. Chicken Pepperoni roll-ups. I modified it a bit for us though. Used homemade sauce. It was really really good!!
