anyone make onion soup from scratch?

For some reason I'm having a craving for onion soup. I don't really like cooked onions, but I love the flavor of onion soup and the cheese topping.

Anyone have a good recipe? Is it hard to make? Is it really unhealthy?

its not healthy but its not horrible.

you need Campbell Beef Consomme i usually make two to three cans worth. I use the water that is directed (one can of water to one can soup). BUT DO THIS FIRST Chop up as many onions you like I usually do about two and half to three BIG onions and sautee them in your soup pan on high with some butter (very little) or cooking spray. Once they start to wilt add stock. If you find you need more onion then cook up some more in a fry pan and dump them in the stock. Splash of worcestershire sauce maybe three little splashes of it. NO salt is needed so pepper to taste and let it simmer.

Then get old or whatever bread (needs to be crusty though nad dense to really work well) usually a french bagette or italian bread works well and when you have cooked your soup for at least a hour toast the bread.

Get your soup bowls ready that are heat safe and add the crusty toasted bread in them.

Then get your cheese sliced or grated. Swiss or Muenster works well and i you like you can use mozz. Fill the bowls with soup covering the toast up and add cheese and put in the over or toaster oven under broil for as long as it takes to get the cheese melted and then take out.

Enjoy!

well FH says im gross, but im exactly like you and i dont eat the onions in onion soup, i just like the flavor of the broth and A LOT of cheese! lol, so i just take the onion package that you would make onion dip (with sour cream for chips) with and put that in boiling water and add cheese to it, i think it is DELICIOUS!!!
