My current favorite is prociutto wrapped around fresh mozzerella with balsamic vinegarette. It's served cold so it can be prepared ahead of time and won't need to be heated up when you get to the party.

Have Fun!!

Hi Tracy,

Some of my family's favorite apps-stuffed mushrooms, baked brie, rice balls, clam dip. Let me know if you'd like any of these recipes.

In a pinch, I run out to the deli and get a bunch of Italian cold cuts and cheeses, along with jars of artichoke hearts, peppers, olives to make an antipasto platter. Just serve with some good semolina bread.

Hope this helps!!

Half an onion chopped fine
about 2-3 tomatoes BIG chopped fine
2 cloves of garlic chopped fine
2 limes squeezed
Cilantro (be careful with the celantro because it will take over the flavor of everything else..

and thats it, in a bowl.,, its great as a dip or on top of grilled chicken

if you feel its to oniony add more tomatoes..

I have a GREAT one. I just made it and it was a hit!! OK.....
Bacon wraps:

You need:
Bacon
Cream cheese and chives
Bread (not wonder it's too soft. Something square would work better)
Toothpicks

Cut each stip of bacon into 3s (you can do more than one at a time)

Cut sides off bread (you can do more than one of these at a time)

Spread cream cheese and chives on each slice of bread.

Cut bread into 1/3s

Take one piece of bread (1/3) and roll it.

Take one piece of bacon (one slice that was cut in 1/3) and wrap on outside of bread.

Toothpick it.

Cook on 350 for about 20 minutes.

YUMMY!!!!!

Here goes:

1/2 cup Grated Parm Cheese
8oz Canned Artichoke hearts (in water)
1/2 cup Mayo (i use helmens just 2 good)
2 garlic cloves.

Chopped the Artichokes
Mixed all ingredents together and put in a square (8x8) cassorle dish. I spray with Pam to grease. Baked on 375 for 30 mins. Or until the top is golden brown. Serve hot with crackers.

This feeds about 4-5 people. I double it and add extra garlic This has been a big hit!

My favorite appetizer is stuffed mushrooms: I use the regular size mushrooms, not those really large ones. fry 1 or 2 cloves of garlic and one small onion chopped finely in some olive oil. While this is cooking, remove the stems from the mushrooms and wash the caps and stems. Chop up the stems and add them to the garlic and onion - fry until stems are cooked. To the mixture, add a little salt & pepper and some dried parsley and if you want a little grated cheese. Remove from flame. Take 1 or 2 slices of white bread and soak them with water, then squeeze them out. Mix the bread and 1 egg into the frying pan mixture to make the stuffing. Put a spoonful of the mixture into each mushroom cap. Sprinkle the mushrooms with a little bread crumbs and Drizzle with olive oil. Bake at 375 or so for 30-40 minutes.

Here is a really easy one that I just served: At Costco in the cheese/deli area they sell a bruschetta mixture in a jar. Just cut up a loaf of Italian bread, put it on a cookie sheet and drizzle with olive oil Toast it in the oven until lightly brown and spoon on the bruschetta mixture. Easy and delicious, looks nice too.

I love homemade Guacamole

2 Avocados Mashed
1/2 red onion finely chopped
1 tomato chopped
Jalapino pepper, to taste, chopped as small as you can
Juice of 1/2 of a lime (or more to taste)
Salt

Mix everything together in bowl and your done!
Yummy!
Serve with tortilla chips and watch it fly!

Make sure you buy the avocado a few days in advance, they must be ripe. They will be slightly soft at the top when ripe.

This one is cheating, but its super easy. If you look in the stewed tomatoe area of the super market, Del Monte or Contadina (can't remember which) has started to sell bruschetta in a can. Literally, open can and spread on warm bread or else serve in a bowl with cut up bread. Its not as good as home made, but it is yummy!

One other favorite somewhat lower in fat and calories but still good:

White bean dip

1/2 small onion
1 can great northern beans drained
1 garlic clove
juice of 1/2 lemon
1/4 cup grated parm. cheese (or more, I like more )

Puree in food processor 'till smooth. If you need to thin it out a bit you can add water or olive oil. Obviously water will keep down the calories and fat!
i serve this with tortillia chips! So much for low fat!
