Usually you don't have to pay anything to block rooms. Call the hotel you are interested in & tell them you need to block off x amount of rooms for your wedding. They will give you the 'discounted' price & they will reserve the rooms for you. I know with the Wingate & Marriott, guests have unitl 30 days prior to the wedding to reserve the room. Once it is less then 30 days, the rooms that weren't used are released
If you are blocking them off at the Inn at Fox Hollow, the min. you can reserve is 7 (I think!). I would check with those close to you and see how many definitely want rooms. Then I would book 7. You can always add more later.
You can call some hotels near your hall and they usually have someone that you can talk to about blocking off rooms. Each place differs with how many rooms they allow you to block off, and their policies. I didn't have to pay anything and I blocked some rooms at the Red Roof Inn in Garden city and also the Wingate Inn.
I blocked off rooms at the Hilton Garden inn in Islip. If we book 10 rooms then me and FH's room is FREE....yeah
Sometimes if you want to block off a huge number of rooms, there is some kind of a charge if some don't get booked. But you can always start small, then add to the block if it's getting close and your block is full.
