So I bought FH a watch for a wedding present and was planning on giving it to him the morning of the wedding....but then my MOH said what if its too big? Then my dad said 'eh who cares it will just spin around a litte' what do I doooo???

I never even thought of that!!!
If he doesnt have another watch, how about casually putting your hands or something around his wrist to measure it so he wont notice and then compare it to the watch??

I'd just give it as is, and have it sized properly later. Unless the watch is super huge, then you can always remove a few links, that's easy to do. It's better to be loose than too tight then he can't wear it on the day.

well, they say that the neck is twice the size of the wrist so maybe you can throw him off by measuring his neck (he'll prob think you're getting him a tie lol) then cut the measurement in half and you'll have his wrist size.
