Budget for Flowers

We are having a smaller wedding and will need max 10 centerpieces, it may be less. I know I want roses and the color in the bouquets and centerpieces. I also want a different type of white and green flowers mixed in the bridal bouquets and tall candelbra centerpieces. I have 2 more visits this weekend. When I go in, should I automatically tell them what my budget is and let them choose the flowers to match my budget which I haven't been doing? I've had vast quotes from a little over 1200 to 1700, the 1700 quote was using tall glass vases instead of candlebras and had about 4 different types of flowers in it.
