Buffet Style.....HELP!!!

Okay so im planning my wedding from scratch......The Buffet is the problem

I come from a big Puerto Rican Family
He comes from a big Italian Family

Andrew and I were figuring out what we would provide...

Our list was ridiculous.....
we had 4 pasta dishes
3 seafood
3chicken
3 beef
2 rices
3sides (vegies/potatoes)

we just cant get rid of anything and thats only DINNER!!!!!!

Thats not including appetizers....


If you had a buffet what did it consist of.???

Appetizers
Dinner
Sides
Desert

How many of each?

I think it also depends on how many people you're having.

We're doing a buffet for about 115 ppl. We're having 3 passed hours deurves (sp?) and 2 cold platters (Antipasti and mozz&tomato). For dinner it's two salads and a bread basket with about 4 diff breads. The entrees are two pasta selections (one veggie), two meats (one steak, one chicken), one eggplant dish (we have a few vegetarians) and two veg (roasted potatoes and broccoli with oil).

ETA: Forgot dessert! 3tier cake (of course!), miniature cheese cakes, fresh fruit and assorted pastries.
