Cake & Dessert

If dinner is served at 830, what time would you recommend serving dessert?
We have the space from 7 until midnight.

We are bringing in our own caterers to the space, and a cake from another pastry chef, so I've been asked what
time I want things served.

i would say between 10:30 - 11:00pm because you dont want to cut the cake too early b/c that is everyones queue to basically go home and that the wedding is over. My wedding started at 7:30pm and ended at 2:00am, and we cut our cake at 12:30 pm i think.

Thanks! I was thinking the same about people leaving after dessert.

Also, I can't seem to recall from the wedding i've been to, is the cake cutting before or after the dessert is served?
