What about mango salsa? I made it one time and it was great. I don't have the recipe on me though. It had cilantro, rum, mango, jalapeno...mmm... can't remember the rest...

I second cous cous. We eat it all the time. Or tabouhli(sp?). It's really good! I think it's the Near East products? My mind is blank, but they are good.

FH loves my roasted red potatoes---take about 10 small/medium sized red potatoes, quarter them, place in a roasting pan or baking pan, sprinkle on some olive oil, then add spices of choice---I use rosemary, parsley, oregano, pinch salt/pepper, and a little grated parmesan cheese since FH is a cheese lover. Then bake for about 30-45 minutes in a 375 degree oven, or until potatoes are fork tender.

cous cous is great... if you are feeling abit more adventurous, you can try a wild rice dish... wild rice, steamed rasisn, carrots julienne & steamed pistachios. Sprinkle with a bit of extra virgin olive oil & any herbal seasoning (Mrs Dash, etc)
