Bumping cause I could use this too!

My mom gave me half a bag of baby spinach since she would never finish it all and now trying to think of something besides sauting with garlic and oil.

This recipe calls for raisins which I would probably eliminate

Ummm...I would just saute it in a little butter, garlic and lemon juice and mix it with pasta...any kind.

My friend used to wilt some spinach in a pot with a can of clams with the juice and some garlic and lemon and serve over spaghetti. You could add some chopped tomatos and/or some chicken if you wanted.

I usualy saute it with cut up boneless chicken breasts, chopped onions and garlic in some oil almost like garlic & oil and seasonings and white canned beans, I add a little chicken broth & lots of seasonings I usually mix it with the pasta that looks like longer elbows they're like little twirly things I think it starts with a C, but you can use any small pasta like small shells or even tortollini...i add alot of parm cheese at the end too but its super simple everything goes in one pan and you can use fresh, canned or frozen spinich.
