Ceremony Music HELP! I need to know how many songs..

My church organist and singer will be away the month of July so I have the 'sub' organist and don't know how to go about picking ceremony music as he is not from my area or my church.

My church doesn't have a book so can someone help me out w/:

What / How many songs I need: (processional, etc)
What song choices I have: (Canon in D, etc)

I didn't get married in a church.. not sure if it's any different, but I chose songs for:

processional
bride's entrance
unity candle lighting
recessional

I forgot to mention that it is a full Catholic mass!
