Changing recipes to make them healthier...

I'm double posting this on recipes also, but I wondered if you have ever substituted healthier ingredients in your own cookies, biscotti, or cakes. I'm thinking of whole wheat flour for white flour, or brown sugar, honey, or molasses for white sugar. What is the finished product like? Is it worth the effort?

I know two egg whites can be used in place of one whole egg. If a recipe calls for three eggs, I will use two eggs and two whites. Now I need to learn about other ingredients.

I know princessrose posted about a chocolate cake with a can of diet coke once. It was delicious - I've made it twice already!!
I did add 2 egg whites to it to fluff it up a bit.
But it tasted the same to me as a regular cake!

You can replace oil in baking recipes with unsweetened applesauce at a 1:1 ratio.

You can use fat free half n half instead of cream in recipes.

Splenda can be used in place of sugar for most recipes, but the weight of the Splenda is is lighter, so it may not come out exactly the same.

I know there's more, but I haven't had my coffee yet, so I'm basically useless right now.

I don't like substituting anything for sugar. The amount that gets distributed in each serving isn't that much (unless it's something something totally sugary, then I don't make it LOL)

Use applesauce in place of oil. I don't know the equivalent though.

I did this the other day and made a strawberry shortcake. It was so good. For whipped cream I used FF cool whip.

whatever you do, do not substitute egg beaters in homemade cookies. I did this and it was not the same !!!

Eggbeaters are actually egg whites with a little oil nd food coloring. You are right, they won't work in baked goods.
