I wondered if you have ever substituted healthier ingredients in your own cookies, biscotti, or cakes. I'm thinking of whole wheat flour for white flour, or brown sugar, honey, or molasses for white sugar. What is the finished product like? Is it worth the effort?
I know two egg whites can be used in place of one whole egg. If a recipe calls for three eggs, I will use two eggs and two whites. Now I need to learn about other ingredients.

Chloegirl, did you use part oil, part apple sauce or just an equal amount of apple sauce? Now that you say it I remember reading that if a recipe calls for 1 cup oil, you can use 1/2 cup oil and 1/2 c. apple sauce, I think. I'm trying to remember if it's the same amount of what the oil would have been.

Re: Changing recipes to make them healthier...
missmmpr, I would rather go with a natural sugar like honey. I'm just not sure what the end result would be like.

Re: Changing recipes to make them healthier...
I have used an equal amount of apple sauce and I would have oil and the cake or muffin is just firmer. When I use half and half or 3/4 apple sauce and 1/4 oil...its a little fluffier.
I make it up as I go!

Sounds good Chloegirl. I'm going to try making blueberry muffins for tomorrow's breakfast. I'll let you know how it works out. Thank you.

I agree Pschica. It worked out really well in the muffin recipe. It was lighter and fluffier, but good.

Splenda works well instead of sugar (no calories) but it is much sweeter then sugar so be careful! Brown sugar has the same amount of calories as white sugar the only difference is molasses really.

Is molasses good for you, making brown sugar healthier than white?

There's a show on FoodTV called Calorie Commando that does the exact thing you are talking about. They give alternatives to make meals healthier.
