chicken cutlet - no carbs

you could do this with eggplant and veal as well, I'm sure...

instead of breading with bread crubs...use parm cheese (but less of it)...its so yummy...DH wants it every night!!

do you bake it or fry it???

I fry it...but I guess you could bake it and drizzle a little olive oil over it...

edited to say: I don't deep fry...just a little EVOO to coat the pan...

I made this & it's really good!

I think The Cheesecake Factory has a chicken cutlet coated in romano cheese that's yummy too!

FUTURE MRSTC, please tell me exactly what you did. How much onion soup (the dry one, right?) and how much cheese? It sounds so good and I have cutlets waiting for tonight.

oops sorry didnt see your post til now -

I used the dry onion soup packet and instead of breading the cutlets, I dipped them in egg and a little milk, coated them with the onion soup mix, then sprinkled with parm cheese. Fried for a few minutes.

Was a little salty (I used the whole packet) so use the onion soup to your liking!

The parmesan cheese thing sounds yummy - I will have to try it.

FMTC...that sounds interesting...but I think too salty for DH...

I tried a few pieces (just parm) in the GF grill last night...but it wasn't as good...needs to be fried to be really good

Another low-carb alternative:

put pork rinds (the ones they sell like potato chips- no carbs) into the mini chopper and make into bread crumb consistency

dip cutlets in eggwash and then coat in the porkrinds

it tastes better than kentucky fried chicken!

Instead of frying chicken cutlets, I put them on the bbq with foil. You get the same taste without the oil!
