Re: chicken soup
all i do is boil chicken legs in 1 pot. in another pot i boil water.. throw in some knorr, carrots and rice. let that cook then throw in the chicken.
and i throw in egg.. but its soo hard to explain and a bish to make with egg cuz u have to gradually pour it in cuz if u pour it in when its cold, the egg will get cooked and get thick like egg drop.
but u can skip the egg and just squeeze lemon and a lil pepper.

Re: chicken soup
I boil a cut up chicken (with the skin removed) with soup greens it is a package of veggies with leek, dill, parsely, turnip, parsnips, potato, onion, celeery and carrot. Bring it to a boil and let it simmer for as long as you have time. Then I cool it and drain the broth out I add the chicken meat and I cut the veggies up and add them to the soup you don't have to do that (my friend who taught how to make this never adds them back in but I don't want all that good stuff to go to waste) and I also cook some thin egg noodles in water and add that to the broth, chicken and veggies.

Re: chicken soup
I wish I saw this earlier... but I am under the weather too and was making my own! Delish!
I boil skinless chicken with bone in...thats where the good stuff is...for about 45 minutes. Remove it, cool it and then cube it. I then toss in cut up potatoes, carrots, celery, garlic, onions, mushrooms, salt, pepper, cilantro, bay leaf, adobo and other seasoning I may be in the mood for. I cook until potatoes are almost done...then add the chicken back in.
I sometimes add a bit of fresh dill, corn, or tomato sauce. If you like a thicker broth, use cornstarch, tomato paste or make a roux and stir it in.
