Re: chili recipe?

Try adding a roux (equal parts of butter and flour). Not too much- maybe 1-2 tablespoons of each. Melt the butter, add the flour and cook until a beigy/tan color or until its brown. Be careful not to burn it. You just need to get the raw flour taste out.

You have the mix it into the chili really well so you don't get lumps and bring it to a boil or else it won't thicken it.

Another option is to cook the chili with the cover off so the steam doesn't condense and make water - thinning out your chili.

Re: chili recipe?

I just found a great and easy recipe for chili. I made it the other night and my husband loved it.

Brown 1 lb of chop meat
then add 1 can diced tomatos
add 1 can of diced tomatos with green chillies
i can of bushes baked beans with onions
i packet of chili seasoning

Let it simmer for 15 minets and serve. It was great with a little sprinkled cheese on top.

it was so easy and so good.

Re: chili recipe?

I found that I can brown ground turkey and use that instead of beef in my chili recipe. No one in the family complained about the change and when I told them they were happy to hear it.

Re: chili recipe?

ground meat
McCormicks hot chili mix
1 can of tomato sauce
1 can of red kidney beans

Saute an onion in olive oil on bottom of pot. Then add ground meat. Brown it, drain it and then pour in the 2 cans of TS and KB. Add chili mix powder. Cook for however long you like. Add oregano, peppers, mushrooms, etc. depending on your preference.

Cook over egg noodles and add cheddar cheese. SOOO Good

Re: chili recipe?

I make my chili differently than those above so I thought I would post. I use chuck steak cut into cubs rather than chop meat.

1/4 cup olive oil
2lbs stew beef cut into small chunks (remove fat)
1 medium onion chopped
3 garlic cloves chopped
1 green pepper diced
1 28 0z can whole tomatoes with juice
1 6oz can tomato paste
1 16oz low salt beef broth
1/4 cup chili powder
1 tbsp cider vinegar
1 tbsp ground cumin
1 tsp salt
1 tsp oregano
1tsp basil
1 bay leaf
fresh ground pepper
4-5 dried whole chilis
2 160z cans red kidney beans drained
1/4 cup cornmeal

In a large dutch oven, heat oil and sear beef quickly (drain fat) Set beef aside. In same pot saute onions and garlic until soft. Return beef to pot and stir in remaining ingredients except for beans and cornmeal and simmer for 1 hour and 15 minutes with cover on. Stir occasionally. Add beans and cornmeal and simmer an additional 15 minutes.

I serve mine with grated cheddar and chopped red onions.

Re: chili recipe?

Mine's very simple:

Brown some ground beef with chopped onion.

Meanwhile .. prepare Bear Creek 'Darn Good Chili' package as directed.

Add in cooked ground beef & onions + 1 can of salt free diced tomatoes.

Dish out & top with shredded cheddar cheese & sour cream, as desired.

(I usually make a package of cornbread to go with this).
