I am going on memory...this recipe is an authentic mexican dish that my friends mom makes for me every time I come over.....
needed:
boneless chicken crisp corn tortillas 1 can of chipotle sauce with peppers 1/2 onion (diced) 2 cloves of garlic olive oil 3 Tomatoes diced black bean (as a side dish)
Boil (yes boil) the chicken.....
at the same time take 2-3 Tblspn if oil and sautee the onion and garlic and then add the diced tomatoes....cook for a bit and then add all the Chipotle juice from the can of peppers and cut up one of the peppers (ONLY 1 - they are SUPER HOT) (let sauce simmer)
After chicken is ready, take it out and shred the chicken....(I just use 2 forks and literally pull it apart to shred it....)
Add shredded chicken to teh Chipotle sauce and let simmer for 5-10 minutes.....
Put Black beans in a pot and cook slow....then drain...
Add the Chipotle chicken to the top of a crisp corn tortilla and scoop beans on the side.....
