Well, the candy I made for easter is just starting to taste yucky, but it went quickly from fine to very yucky...If you want them fresh, I'd say a week ahead, no more than 2 weeks at a max. They just have a different look and taste when they're very very fresh. They're fine after that for awhile, but they don't have that delciious fresh taste and look!

They'll get that weird white color on them if you freeze them...It really depends on what chocolate you use. Some will last longer than others.

They are called candy melts. The white stuff can happen at any time I think. It's called blooming when the chocolate starts to separate. You probably have to keep them in a cool place where the temperature won't change very much.

A wwek before is probably the best. They won't take long, and you know what? a week before the wedding, it'll be good to take that time out to make the lollipops..you know? Just have an hour to relax, and put on some music while you';re doing it!
