Yes.... the only thing different from a Catholic ceremony and Mass is that there is no Liturgy of the Eucharist in a ceremony.
For a ceremony you will need: Old Testament Reading Responsorial Psalm New Testament Reading Gospel Reading (only priest or deacon can read this) Prayer of the Faithful

Yes...it's a great way to honor people outside your wedding party and it makes the ceremony feel a little longer.
