im going over my contract and it says an 18 % service charge and a $300 maitre'd fee is included. Is that considered their tip or do we still have to tip the maitre 'd, waitstaff and bartenders?

It is not their tip. I met with Lou/Nick last week. It is the number of people x tax x 18% plus the 300;
