CLM - when do you make descisions on food & cake

I will be booking within the week and I just wanted a heads up on the following:

When do you pick out your food? I know what we want but I was wondering when did u actually have to say this is what i want.

Cake - when did you pick this out? I heard fondant is nasty tasting even though I thought it had no flavor. What icings are smooth? comments?

I think we picked our menu like a month or two before our wedding date... cake too. We had yellow cake with fresh strawberries & whipped cream. Not sure what was on the outside of the cake.
