The Banquet Manager at my RH has been really great about answering emails and phone calls with any questions I have, but as far as things like menus/tastings/logistics - my hall sets up a meeting with us about 2 weeks before the wedding to finalize all that. But your RH should be wiling to talk to you even if it's a year before your wedding!
