Re: Cooking classes?
I went to Viking last year. The class was fun, but I didn't really learn much from the class. I knew most of what they taught...but if you don't know much about cooking, it's a good beginning. The classes are about 100 dollars. I recommend going with a friend or your FH.
If you live near Manhasset, I know Sur La Table (it's a store) on Northern Blvd. has classes. I don't know much about it, though.

Re: Cooking classes?
Do you guys have Sur Le Table up there? It's like a fancy Lechter's, and they have MANY MANY affordable and diverse cooking classes.

Re: Cooking classes?
If you don't have time or budget for classes, watch the Food Network or even some of the lessons they have on their website. They have lessons on 'basics' and up, and you can do it at your leisure. I can cook pretty well, but even just watching five minutes or so here and there, and you'll pick up methods SO quickly!!! Before I knew it, I was 'braising' 'searing' 'reducing' and 'glazing' and 'blanching' and making my own marinades, all from stuff you pick up from a few minutes of watching the experts.
Before you know it, you're making up dishes on your own and it comes very easily.
Check out www.foodtv.com.

Re: Cooking classes?
I took two Viking classes and learned alot.
Also, check out your continuing ed classes at your local high schools. Many have cooking classes as well as the community colleges.

See if you have a Sur Le Table store!! Also, we have a local restaurant with a five star chef who does a Sunday lesson every month or so, limited availability, and for a great price!! There HAVE to be these kinds of things on LI if they exist in VA, where food is a secondary thing! hahahaha

There's also a place in Lynbrook that a coworker of mine always goes to but I forgot the name.
