I just found out last night they want me to cook a dish for xmas. Well it would have been nice to know a little earlier.
Jim and I are cooking pork chops with barbeque sauce and I’m cooking tacos. Why tacos? Cause the old lady loves them (his grandmother). All they ever eat though are Taco Bell tacos!!! *shock* I’ve been making tacos from scratch since I could remember so I’m making Tacos for Xmas.
Has got to be the STRANGEST thing I’ve ever made. I wanted to make pot roast or a standing rib roast but instead we’re having Tacos.
We ran it past the family last night and guess what? They’re all for it (just “Please bring sour cream”).
Is it only me, but I don’t think of food and Xmas together. I think Xmas with gifts, drinks and snacks. Nothing close to what Thanksgiving is.
Still…. Tacos??????????????? *shrug* I am here but to serve!

Re: Cooking Tacos for Xmas!!!!!
in DH's family, they don't really have a food associated with Christmas either. Last year his mother went through every meat in the book, before she decided what to make.
My family usually has manicotti, so I kinda assocaite that with Christmas, but for me, it is the breakfast (fatty scottish stuff) & the dessert (shortbread) that are the foods most associated with Christmas.
I think, really the point is to have soemthign 'special' and to your grandma-in -law, I guess tacos are special.
my Scottish grandmother LOVED any kind of Italian food my mom would make- even just spagetti & meatballs, because it wans't part of her culture & she never made it because my grandfather didn't like it. SO, that was 'special' to her.

Re: Cooking Tacos for Xmas!!!!!
heh thanks guys.
Tacos it is.. we're going shopping for the stuff tonight.
I make mine from scratch (sorta). The only cheat I do is at the last minute I put in some mild salsa to add tomato and flavors into the ground beef.
In case anyone is curious here’s my recipe REALLY lazy style! Using your man is necessary!
1. Chop up onions and two garlic gloves (I let him do this step) 2. While your man is playing with the knife, brown up some ground beef (leaner is better) after the first ‘drain’ add in the onions and garlic. 3. Set your man off to chop up tomatoes, lettuce, set out the grated cheese and sour cream. (BONUS) - If your man is really efficient (unlike mine) he can warm up the tortillas at this point. 5. Cook a little bit then add in the comino and garlic to taste and Drain again, flavor again (lose a little in the drain) Add in a bit of salsa for color and flavoring. DONE! 6. If your man is still asking where the sour cream is, this is where YOU warm up the tortillas while overhand passing the sour cream at your man. 7. Put all the fixings on one plate, use a bowl for the taco meat and another covered plate for the tortillas and away you go!
Total time (with fumbling hubby/fh) 10-15mins Fridge to Table.
(BONUS) Enchiladas 1. Warm up some corn tortillas (so they roll easier and don’t tear) I usually get down right nasty and give them a quick dip in hot oil for this. Gotta have grease. 2. Put some taco meat into the tortillas and roll up (not too much or they won’t close completely) and place into a pan. 3. Keep going until you’ve filled the pan. (BONUS) you can use cheese or add cheese to the meat for alternatives) 4. Personally I love chili but can’t stand beans. I get no bean chili and pour over my rolled up enchiladas. 5. Cover the whole thing with shredded cheese Put in a 350 oven until the cheese melts and serve!
Total time (from done meat) about 15-20 mins to the table.
I normally cook these both together and Jim makes some Spanish rice from a bag. This is dinner. I don’t think we’re making the enchiladas for Xmas though. That might be too much.
