Crockpot or other ideas for 2?

OK you guys convinced me to get a crockpot.
I am going to get one this week.

BUT i need some advice, I have been cooking a lot since I got married. I find that it is hard to cook for two - we always have so many leftovers that we end up throwing away.

I see you guys say you cook roasts and stuff in the crockpot....

What do you make for 2 people? (With or without the crock pot) so that you dont have tons leftover???

You can make a small roast in the crockpot for 2. Here's my recipe:

1 small pot roast
1 package onion soup mix
1 can cream of mushroom soup
2 beef buillons

carrots/potatoes optional

Put all into crockpot and keep on low for 8 hrs or so OR on high for 4-5hrs. The meat will fall apart and the soups will make a nice gravy. If you want to add potatoes or carrots, I usually peel the potatoes and dice the carrots and put them in the last 2-3 hrs of cooking - right on top of the roast.

Another thing I make for my DH and I. It's so easy and fast!!

Salmon & Salad

I buy the salmon from Sam's club or Costco and cut it into individual servings and freeze them.

When I come home from work I take out 2 frozen salmon servings, take them out of the zip lock and into a pyrex dish, pour olive oil, adobo seasoning, garlic, salt & pepper and microwave. 2 piece usually 8 minutes or so. While that's cooking I make a salad to go with it.

When the salmon is done I SWEAR TO YOU...it looks and tastes like it came from a restaurant!!! Everyone cannot believe that I do this.

Hope these help.

We don't eat COM either - yucky poo poo. I just use beef broth to cook the pot roast in. You can thicken the gravy with some flour mixed with water.

Turkey burgers, meatloaf, meatsauce, I made in crock pot turkey parts and it smelled like Thanksgiving! I put in turkey legs, some peeled and chunked sweet potatoes, canned gravy, and some onions, and let it cook on low for about 7 hours it was yummy, it is the only thing so far I have cooked in there. Boneless skinless chicken thighs marinated in terayaki and green onions and throw on Forman grill, pasta. I willtry to think of more . Hope this helps.

If you don't like COM try CO Celery of vadelia onion salad dressing. Or Italian Salad dressing with Chicken

Chili is always good. It's great for lunch the next day. It also freezes well, so you can have it a week or two later.

I'm having the same problem....when I food shop, I'll split stuff, so one tray of cutlets is actually 2 meals for us! Loaves of bread, I freeze half so it doesn't go bad. I do Tacos (with the Old El Paso kit) and then the leftover taco meat can be put in tupperware, then the next day it's lunch with shredded cheese, some salsa, and tortilla chips or the flour tortillas that the kit comes with.

I'll also put leftovers in mini-meals, like steak with potatoes in a container, and that is lunch. I just froze half of my chili leftovers and I'm giving the other half to SIL. Maybe you could swap leftovers or maybe there is someone less fortunate or unable to cook that you could donate once or twice a week.
