Why don't you make a nice thick soup (perfect for a night like this) and throw in the veggies and rice and have hummus on the side. Or if you don't want to put the veggies in the soup - have them on the side with the rice and the hummus?

Sautee onions and tomatoes in olive oil. If you don't have tomatoes, don't add them. Then add black beans and Goya Sazon seasoning. Serve over rice or in taco shells. It takes 2 minutes and is delish! I'm sure you don't have Sazon seasoning though.

Another option:

1/2 cup flour
1 small onion, diced
2 cloves garlic, minced
1/2 tsp dried oregano
1 small hot or jalapeno pepper, minced
1 tbsp olive oil
1/2 medium pepper, diced
2 cups cooked or canned black beans, mashed
1/2 cup corn niblets
1/2 cup bread crumbs
1/4 tsp cumin
1/2 tsp salt
2 tsp chili powder
2 tbsp fresh parsley, minced (optional)

On a small plate, set aside flour for coating. In a medium saucepan, saute the onion, garlic, oregano, and hot pepper on medium-high heat until teh onions are translucent. Add the peppers and saute another 2 mintues, until the papper is tender. Set aside. In a large bowl, mash the black beans witha potato masher or fork. Stir in the veggies, bread crumbs, cumin, salt, chili powder, and parsley. mix well. Divide and shape into 5 or 6 patties. Lay down each patty in flour, cating each side. Cook on a lightly oiled frying pan on med-high heat for 5-10 min or until browned on both sides. Makes 4-6 patties.

OR --

Sautee veggies and garlic in olive oil and serve it over rice.

OR --

Just eat hummus sandwiches!

ETA -- the EASIEST solution with the ingredients you have is CHINESE FOOD! Throw everything (tofu, veggies, etc.) in a wok or frying pan, add terriaki and/or soy sauce and some seasonings, and voila!

Can you tell I've been a veggie for 17 years?
