Destination Wedding or East Wind?

so after much talk FH and I are about 95 percent sure we will be having a destination wedding over East Wind.

so are any of you destination brides?
how do you go about arranging a destination wedding? i am utterly clueless with this whole planning process

what are good but inexpensive resorts as we do not want our family/friends spending half their savings on our wedding

we are open to anywhere in caribbean/mexico!
