Diet Soda Cupcakes

Since a few people were asking in the dinner thread...this is a WW technique of having cake

Just take a box of cake mix and mix it with one can of diet soda. That's it; no oil or egg or water. Just the mix and the soda.

When calculating the nutritionals, use the column for the mix only - not the prepared column. Diet soda has no calories or fat, so it adds nothing in that regard.

Some people claim that adding an egg white makes the consistency a little better. I never have eggs, so I can't vouch for that.

I've only made this as cupcakes, not a cake...and they come out delish! I usually top them with a little fat free cool whip or raspberry jam, but you don't even need to do that.

You can play around with the flavor combos too.

My personal fave is diet sprite and Funfetti mix.

You can do chocolate with diet Coke, or diet Dr Pepper, or diet Cherry...

Lemon cake with diet Sprite or diet Mountain Dew...

White cake mix with diet orange.

I live alone so usually use half a box of mix and half a can of soda...more than that amount of baked goods in my kitchen equals trouble.

Enjoy!

Re: Diet Soda Cupcakes

OMG I made this cake with diet coke (thanks to Laura's suggestion) and it was orgasmic!!! So freaking good and everyone loved it at the Super Bowl party last week.

Better Than Sex Cake
Yield: 24 Servings

1 Box Devil's Food Cake Mix
10 oz Diet Coke
1 egg white
6 oz Ice Cream Toppings Fat Free Caramel
7 oz Fat Free Condensed Milk
1 c Heath Bar Bits,Found
8 oz Fat Free Cool Whip

Mix cake mix, egg white and diet soda. Bake as directed in a greased 9x13 pan. During the last few minutes of baking, put caramel and
condensed milk in a sauce pan and stir on medium low heat until smooth.
Take cake out of oven, and poke holes all over the top. Pour caramel mixture over warm cake, filling in the holes. Sprinkle Heath bits over
the top, reserving some for the top. Cool completely. Cover with container of FF cool whip and sprinkle with remaining heath bits. Put
in fridge until ready to serve.

Shauna....that's because brownies have a different consistency. You can use one can of black beans that you've pureed with one box of brownie mix and it's suppossed to come out good.

I personally love the No Pudge brownie mix...it's easier than dealing with pureeing beans.

This recipe was just highlighted in the HungryGirl daily email.

I have a cake to make for a co-workers last day tomorrow so I went out to buy the Funfetti and Diet Cream Soda that she recommended.
