Dieters.............

I just made a kick-a$$, healthy dinner, if you don't mind me saying so lol

I made chicken with cannelinni beans and am so amazed at how good it tastes! I altered a recipe and am really shocked it's so good!

Here's how you make it, for those of you that are interested:

I took two small chicken breasts (skinless and boneless) and put oregano, thyme, rosemary, sage, salt, pepper, minced garlic ( I love garlic so I used two small cloves) and lemon in a dish and turned it around a few times to coat both sides. Then I drizzled on a little less than a tablespoon full of EVOO and tossed it again. I cut the chicken into chunks and put them in a frying pan over medium heat and let the one side slightly brown.

Then I cut up a half of a small red onion and put the onions in the pan ( I put them in the center of the chicken..I made a circle around the onions with the chicken basically) and turned the chicken.
I let that sit for two minutes and added a can of pre-cooked canellini beans.....I put some salt and pepper over them before mixing them in.

I mixed everything and let it sit for a minute..mixed again...1 minute...mix...1 minute....done! It's sooooo good too!

fh likes spanish rice and beans so thats what i usually make for him. However we're both on a diet so he doesn't want to eat rice but still eats the beans. Since were both on diets i dont add pork fat to the beans and just LOTS of onions, garlic and chicken bouillon. For the shrimp i cook it in EVOO...Heat up the pan then EVOO and minced garlic to saute for a bit, then i add the shrimp and squeeze lots of lemon on top. Now he'd probably kill me but weve been eating so healthy so a little bit of fat is ok but i then add a bit of margarine and white wine and then just a little bit of salt(sometimes) i usually stay away from salt and pepper. Which basically is shrimp scampi.

This week im telling him NONE of this though, im tired of eating i
