hmmmm....no meat.....

Cheese Enchiladas!!!

....hmmm......or sometimes when FH and I are lazy we just pick up some cheese, crakers, dips, toast, veggies & lox and we just kinda pick at it all night.

or you could make....Lasanga, or Spaghetti Pie is pretty yummy (and easy), or possibly Portebello Mushroom Burgers (no meat there)...Tacos with fish instead of red meat...

I cook alot...and could literally go on forever....

Re: dinner

my fav thing to make is this.

get a big Wok or pan and put some Olive oil onthe bttom, shake in some garlic salt and season all.

cut up brocolli, coliflower and carrots (the baby ones i cut them long ways into 4 pieces) place in wok and stir fry (medium heat) add some more olive oil season all and garlic salt. cook till soft. when almost done i will also cut up some black olives and mix them in for a minute.

boil some pasta or spagetti. i love healthy harvest whole wheat

strain and again put in olive oil, garlic salt and season all, mix then pour in the veggies. its really yummy.

Re: dinner

this is my chicken francaise recipe:

Chicken Francese
Ingredients:
4 skinless, boneless, chicken breasts (about 1.5 lbs)
All-purpose flour, for dredging
Kosher salt & freshly ground black pepper
4 large eggs
3 tablespoons water
1/4 cup extra-virgin olive oil
1/2 lemon, with rind, cut in thin rounds
1/2 cup dry white wine, such as Pinot Grigio
1 cup chicken broth
1/2 lemon, juiced
2 tablespoons unsalted butter
1/4 cup chopped flat-leaf parsley

Instructions:
Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them. Pound the chicken breasts w/ a flat meat mallet, until they are about 1/4 inch thick.

Put some flour in a shallow platter and season w/ a fair amount of salt and pepper, mix w/ a fork to distribute evenly.

In a wide bowl, beat the eggs with 3 tablespoons of water to make an egg wash.

Heat the oil over medium-high flame in a large skillet.

Dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off. When the oil is nice and hot, add the cutlets and fry for 2 minutes on each side until golden, turning once. Remove the chicken cutlers to a large platter in a single layer to keep warm.

Toss the lemon slices into the pan an cook for 1 to 2 minutes, until fragrant. Add the wine, broth, and lemon juice, simmer for 5 minutes to reduce sauce slightly.

Roll the butter in some flour and add it to the skillet, this will thicken the sauce. Stir to incorporate and dissolve the flour.

Reduce the heat to medium-low and return the chicken to the pan; place the lemon slices on top of the cutlets. Simmer gently for 2 minutes to heat the chicken through. Season with salt and pepper and garnish with chopped parsley before serving.

Well first put a bowl of flour, and also a bowl of beaten eggs to dip the chicken in...The beaten eggs though what you do is beat two eggs, put 1/4 cup of milk and parmigan cheese and mix it together.

In a pan put olive oil and let it heat up just a little

Take the chicken put it in the flour first then the eggs(its the opposite of chicken cutlets)

Put them in the pan and let it cook about 2-3 minutes on each side or until they turn golden brown.

Take the chicken out and put them aside on a plate.

Then in the pan with the oil still in it you add:

1/4 cup of chicken broth

1/4 cup of dry white wine

1/4 cup of butter but also mix in flour with the butter

and one lemon squeezed

mix it together a little bit then put the chicken back in and let it cook for a few mins together.

* here is a tip, you can adjust the flavor to your liking, taste the sauce when its still cooking, see if you think it needs more wine, sometimes its too sweet so put in a little bit of chicken broth, or maybe butter...If the sauce is too thick you put too much flour so just add either a little bit of water of white wine or chicken broth if it needs it, or if you want the sauce a little thicker add more flour.

Then if you also want after you take the chicken out of the pan you can add pasta in there and mix it in with the sauce...I love pasta in the same sauce.

Its very quick and easy....Hope i didnt complicate with the tip, but it helps
