Ingredients

-2 Cups all purpose flour
-1 Tsp baking soda
-1/4 Tsp salt
-1 (7 or 8 oz) tube or can almond paste
-1 Cup butter softend
-1 Cup sugar
-4 Large eggs
-1 Tsp vanilla extract
-1/2 Tsp almond extract
-10 drops red food coloring (i did it til it looked pink)
-6 drops green food coloring (again until it was pretty green)
-yellow food coloring (it says leave it plain but i dyed it yellow for effect lol)
-1/4 Cup seedless red raspberry jam
-1/4 Cup apricot preserves
-1 6oz package semi sweet choc chips melted

1. Preheat oven to 350. Spray three 9 x 13 baking pans, line pans with wax paper lightly spray wax paper with non stick spray.

2. Combine the flour, baking soda and salt in a medium bowl; set aside.

3. With an electric mixer on high speed, beat the almond paste, butter and sugar until light and fluffy add the eggs one at a time, beating well after each addition. Beat in the vanilla and almond extracts.

4. With the electric mixer on low speed, stir in the flour mixture until just blended. Divide dough into thirds (about1 1/2 cup each) transfer to 3 medium bowls tint one batch pink, one green and one yellow.

5. Scrape the yellow dough into one baking pan, the pink into another and the green into the third spreading each until smooth. Bake until the edges are golden brown about 12 minutes. Cool the layers completely.

6. Invert the layers onto a work surface and remove the wax paper. Spread the raspberry jam over the green layer top with the yellow layer, spread the apricot onto the yellow layer and top with the pink layer. Wrap in plastic wrap, place on a cutting board and top with another cutting board or large heavy flat pan to weigh down. Refrigerate overnight.

7. Remove the plastic wrap spread the melted chocolate over the top layer let cool and set slightly. Then cut them! according to the recipe it should make 72 cookies for 2 points each and yay you will have rainbow cookies! :)
