dinner ideas

Here's my new idea...

I'm always looking for meal options...so I thought we could post one option breakfast, lunch or dinner (depending on the thread)

It could be anything related to nutrition...we could label it WW, or SBD, or Atkins, or high fiber, or vegitarian....etc

what do you think??

Here's my first:

SBD:
chicken breast - dip in egg and bread in Parm cheese!! bake or fry in pan with a drizzle of olive oil

mashed cauliflower - very well boiled cauliflower...drain very well...mash with hand blender and add butter...sour cream..paprika...salt

WW

easy side dish (but I often eat this as my dinner)

one can potatoes (you can do fresh, but canned is so much quicker than boiling the potatoes)
one can green beans - put over potatoes
shredded mozzerella cheese (your preference)

microwave for 2-3 minutes

This could be lunch or dinner.

Large box of beef broth (more if you like)
can of diced tomatoes
2 cups of spinach
package of tortellini
Salt/pepper to taste

Bring the first 3 ingredients to a boil then add tortellini's and cook till they soften.

I haven't ran it through WW but it says it is a point per cup. Really good and very fast and easy to make.

I want to try this!!!

Re: dinner ideas

Yes, frozen tortellini. That is what is great about it that you don't have to cook them before. They soften in the beef broth.

I forgot to say I used fresh spinach, but I am sure you can use whatever you prefer.

Let me know if you like it Erica!

This is my new favorite,
I guess it would Low Carb:

Grilled chicken breast with a thin slice of fresh mozzerella and drizzled with balsamic vinagerette. Great alone or over some romaine lettuce.

One of our favorite chicken dinners:

take chicken breasts and marinate them in BBQ sauce for as long as you can (the longer the better!!!). I like the honey mustard BBQ sauce but you can use any BBQ sauce.

Coat them in crushed corn flakes (you can buy a box of them alredy crushed).

Bake.

So delicious- crunchy, tangy and so filling! You don't have to use a lot of BBQ sauce since it's so thick. You can even dip the chicken in extra BBQ sauce- so yummy!

i don't know the points for WW off hand but it's not very much- probably 5-6 depending on the size of the chicken breast.
