Re: Dinner Recipes
not the quickest recipe... BUT i make it once and it lasts for daysssss. plus it's super healthy and inexpensive!!
spicy moroccan chicken & sweet potato stew
1 teaspoon olive oil 1 onion, chopped 4 cloves garlic, minced 1 pound sweet potato, peeled and cubed 1 orange bell pepper, seeded and cubed 1 pound cooked chicken breast, cubed 1 (28 ounce) can diced tomatoes 2 cups water 1 teaspoon salt 2 tablespoons chili powder 1 teaspoon ground cumin 1 teaspoon dried oregano 1 teaspoon cocoa powder 1/4 teaspoon ground cinnamon 1/4 teaspoon red pepper flakes 1 1/2 tablespoons all-purpose flour 2 tablespoons water
1 cup frozen corn 1 (16 ounce) can kidney beans, rinsed and drained 1/2 cup chopped fresh cilantro
Heat olive oil in a large pot over medium heat. Stir in onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in sweet potato, bell pepper, chicken, tomatoes, and 2 cups of water. Season with salt, chili powder, cumin, oregano, cocoa powder, cinnamon, and red pepper flakes. Increase heat to medium-high and bring to a boil. Dissolve flour in 2 tablespoons water, and stir in to boiling stew. Reduce heat to medium-low, cover, and simmer until the potatoes are tender but not mushy, 10 to 20 minutes. Stir the stew occasionally to keep it from sticking. Once the potatoes are done, stir in corn and kidney beans. Cook a few minutes until hot, then stir in cilantro before serving.
my tips
- microwave the chopped potatos for 7 minutes before adding to the stew
-instead of using already cooked chicken, i just threw 3 big chicken breasts on the Foreman while the garlic and onions sauteed, then shredded the chicken

yay! let me know how you like it, my FH loves it!
i think the ingredients cost me $12 and we got 5 meals out of it (i already had all of the spices though), so it came out to $1.20 per serving!! (i do that with all my recipes... i know it's a little weird)

Re: Dinner Recipes
I don't have that many recipies to share because I too, cook the same 5 things but I have been experimenting a lot with cauliflower lately (don't ask why! lol) My favorite is the mashed potatoes.. They taste really good (not at all like cauliflower), are super easy to make, and they are only 2 weight watcher points per serving!
Ingredients 8 oz cauliflower, florets 3 small Yukon Gold potato(es), peeled, cut into 1-inch chunks (about 10 oz) 2 medium garlic clove(s), peeled 1 tsp table salt, divided 1/4 cup(s) 1% low-fat milk 2 tsp butter 1/8 tsp black pepper 1 tbsp chives, fresh, snipped
Instructions • Place cauliflower, potatoes, garlic and 1/2 teaspoon of salt in a medium saucepan. Add enough water to cover ingredients and bring to a boil. Boil until vegetables are tender, about 10 to 15 minutes; drain and return to saucepan. • Stir in milk, butter, remaining 1/2 teaspoon of salt and pepper; mash with a potato masher until smooth. Stir in chives and serve. Yields about 1/2 cup per serving.

Re: Dinner Recipes
Mediterranian Chicken
1 small jar roasted red peppers 1 small can sliced black olives 1 cup italian dressing (I use light or fat free) dash of oregano 1 lb chicken
Take first four ingredients and puree in blender to make a marinade.
use just enough to marinate chicken for a few hours or over night. Reserve the rest (I freeze 1/2 the recipe to use another time)
Pan fry (using pam), broil, or grill the chicken.
Serve over pasta or rice. Heat remaining marinade for a sauce....
So easy...so good.

Re: Dinner Recipes
Tonight I'm roasting chicken breasts on the bone with potatoes and carrots... I pour a mix of dijon mustard, some lemon, garlic, olive oil and salt and pepper over them. As long as you take the skin off the chicken it's healthy!

Re: Dinner Recipes
tacos!
grate/chop carrots, cucumbers, tomatoes, cheese, lettuce and scallions.
Cook beans or chicken.
Toast those hard taco shells. Put all the food in the taco shell and add salsa or sour cream.
Done!

Re: Dinner Recipes
Chicken Saltimbocca!!! one of FH's fav's!
compliments of Giada :)
Ingredients 6 (3-ounce) chicken cutlets, pounded to evenly flatten Salt and freshly ground black pepper 6 paper-thin slices prosciutto 1 (10-ounce) box frozen chopped spinach, thawed 3 tablespoons olive oil 1/4 cup grated Parmesan 1 (14-ounce) can low-salt chicken broth 2 tablespoons fresh lemon juice Directions Place the chicken cutlets flat on the work surface. Sprinkle the chicken with salt and pepper. Lay 1 slice of prosciutto atop each chicken cutlet.
Squeeze the frozen spinach to remove the excess water. Season the spinach with salt and pepper. In a small bowl, toss the spinach with 1 tablespoon of oil to coat.
Arrange an even, thin layer of spinach atop the prosciutto slices. Sprinkle the Parmesan evenly over each. Beginning at the short tapered end, roll up each chicken cutlet as for a jellyroll. Secure with a toothpick.
Heat the remaining 2 tablespoons of oil in a heavy large skillet over high heat. Add the chicken and cook just until golden brown, about 2 minutes per side. Add the chicken broth and lemon juice, and scrape the browned bits off the bottom of the pan with a wooden spoon. Bring the liquid to a boil. Reduce the heat to medium. Cover and simmer until the chicken is just cooked through, about 8 to 10 minutes. Transfer the chicken to a platter. Simmer the cooking liquid over high heat until it is reduced to about 2/3 cup, about 5 minutes. Season the cooking liquid with salt and pepper, to taste. Remove toothpicks from the chicken. Drizzle the reduced cooking liquid over the chicken and serve immediately.

Re: Dinner Recipes
Healthy/easy chicken casserole (or tuna)
you need 2 cans of chicken (or tuna), or you could use 12 oz shredded chicken breasts cooked 1 med onion 2 boxes frozen spinach 1 can cannelini beans 1 box whole wheat pasta (penne or rotini) 1 can chicken broth (i use low sodium)
chop 1 onion and saute with olive oil and garlic, (you can add a few tsps of butter, but i usually don't) when onion cooks fully add 2 tbs flour, let the flour cook out a bit, then add the chicken broth and a cup to a cup and a half of milk, let that mixture thicken stir occasionally, raise heat a little if need be.
microwave spinach and put in a clean towel to ring out (lots of water will come out)
once the sauce thickens, then add the spinach, cooked chicken and beans (not the oil from the can though, rinse beans too) to sauce
put in casserole dish, bake for 10-15 mins at 350 you can put parm cheese on top

I just Goya-ed it up and made some yellow rice and black beans to supplement some leftovers. Can't beat dinner for 3 bucks.
