Not sure about dinners but I am ALL ABOUT doing breakfast with the characters, which I know you have to make reservations for.

If you know where you're going to be at dinner time everynight or if there are a few restaurants you absolutely want to eat at then you should make reservations. otherwise i wouldn't hold yourself to times.
brown derby at hollywood studios is awesome! the japanese place in epcot is awesome, so is the chinese place and mexican place (you really can't go wrong with any of the epcot restaurants

Narcoossee's in the grand floridian one night for sure!!!! It is amazing. Make sure you make your reservation to work around the fireworks at the magic kingdom the wishes show. They let you get up and go outside on the porch, they play the music through speakers, and you can watch the fireworks over the lake. We did this and finished dinner, and was able to go outside, then come in after for dessert. Also request a window table.

We recently went to Disney -
Some of my faves were
Definitely Citricos, if you are staying at the Grand Floridian, you should definitely check it out.
I also really loved Flying Fish at the Boardwalk, and we had a phenomenal meal at blue zoo in the Dolphin!!

I loved the Steak house in Canada in Epcot. If you are doing hte meal plan with Disney it is worth it to check out. Amazing food! Germany has great food too.
I always do the Crystal Palace in Magic Kingdom. It is a buffet and has Pooh bear and his friends walk around from table to tables.
Hollywood Studios has hte 50's Cafe and hte SciFi Cafe which are also favorites.
I could honestly go on and on about the different places that are good to eat at in Disney. You really can't go wrong with any you have picked!
Chef Mickey is Contempory for breakfast was yummy too!
