Re: Dinner-what to cook?
I also LOVE to make whole wheat pasta primavera. Just chop up a bunch of veggies ( i use broccoli, cauliflower & red peppers and an onion for flavor) sautee in a bit of olive oil until cooked. Make sauce, make pasta and mix it all together. so yummy, so filling and still healthy!

Re: Dinner-what to cook?
I am making this tonight. I don't have the recipe ... but it's really easy ... buy any kind of white fish - tilapia and flounder are good - and bake it in a little white wine / butter / garlic sauce (i think the original recipe calls for you to 'dot' the butter on top). get some tomatoes and chop them up small and place them on top of the fish. you can also chop up basil and put that on top. SOOO yummy.

Re: Dinner-what to cook?
i make asian meat balls with ground turkey, FH loves them
20 oz ground turkey 4 scallions chopped 1/4 c bread crumbs make 1 inch round meatballs
mix it all together and bake at 350 for 20 min
last 5 minutes cook with sauce.
I usually buy shandong sauce from international market and serve with rice noodles or brown rice with edemame
