I plan on hitting almost ALL the flowers recommended on various posts, until I find ones I like or I drop, whichever comes first. Do I need to make appts at these places?

I am pretty sure you do. I met with Expressions Floral Design last night and she came to me for our meeting. She is great!

I have known by florist Flowers By Emil for years and I still had to make an appointment.

Definately make appointments. A good florist (I'm using Flowers Michele) will spend an hour or more during your consultation (prior to booking) so they need to schedule the time with you.
By the way--DEFINATELY go see John from Flowers Michele. I cant say enough about him....he is so nice, creative, and he really gets to know who you are and what kind of look fits you and your wedding.

I would definitely make an appointment-that way they get to spend time with you. Sometimes it takes a few weeks to get one so I would call soon if thats what you are planning to do next
