Shouldn't they already know the date and time if they're your vendors?

No, you don't have to do that. But it is wise to call them to remind them of the wedding. I think most of the brides do the 2 weeks prior call. I would like to hear some comments myself on when to follow-up with them prior to the wedding.

What about the officiant though? I've heard of that before and was wondering about it myself.

We invited our priest, as a courtesy. He declined.
