Re: Does anyone have a great Meatloaf recipe?

It's funny, I just promised in another post that I would post this recipe:

Turkey Meatloaf
4-6 Servings depending on your eaters

2 pounds lean ground turkey
3 tbs Worchestershire sauce
2 tbs Dijon mustard
2 eggs or egg substitute (I use the substitute for less calories)
Salt & Pepper to taste
1 ½ cups bread crumbs
Parsley-I use a lot, at least a couple of tbs
1 small onion or ½ a big one
Garlic cloves to taste or I use the powder if I'm cloveless

Saute the chopped onion with the garlic, set aside. Meanwhile combine other 7 ingredients. Add onions at the end. Mold into loaf and bake in pan (I use a 13x9) for 45-55 minutes. Midway through, coat with Kikkoman's (or whoever's) Teriyake Glaze.

My DH normally does not like turkey replacing meat but he is CRAZY about this recipe. It's low fat and easy too.

Re: Does anyone have a great Meatloaf recipe?

I have been making mine for years
1lb or so of ground beef (or turkey)
1 egg
1/2 cup milk
1 cup bread crumbs
1 heaping tablespoon garlic salt and onion flakes
salt/pepper

mix, put into loaf pan.
I then add a few slices of uncooked bacon if I have it in the house and coat with ketup.
Cook for 1 hour at 350. Yummy and easy.

Re: Does anyone have a great Meatloaf recipe?

I never write down how I make stuff .. so this is as best as I can recall .. for one of the kinds of meatloafs I make.

1lb sirloin ground beef (85%-90% lean)
1 small finely chopped onion
5 medium mushrooms, finely chopped
3 handfuls of Stove Top stuffing mix
about 1/4 cup of Red Wine Vinegar

mix all ingredients

(optional) divide the mix into four equal parts
(I like to make mini meatloaves)

form loaf/loaves

place in glass casserole dish.
brush generously with ketchup
cover with aluminum foil.

bake at 350 for 45 minutes

remove foil

bake another 10 minutes.

I always make Natalie Dupre's recipe. You use oatmeal instead of breadcrumbs. It always comes out great.

Re: Does anyone have a great Meatloaf recipe?

I make an italian meatloaf which is fantastic. Really moist and delish! I got the recipe off of Allrecipes.com -- I love that site!

1 1/2 pounds ground beef
2 eggs, beaten
3/4 cup dry bread crumbs
1/4 cup ketchup
1 teaspoon Italian-style seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic salt
1 (14.5 ounce) can diced tomatoes, drained
1 1/2 cups shredded mozzarella cheese

(IF i use the italian-style breadcrumbs, i skip the oregano - basil and garlic...)

1 Preheat oven to 350 degrees F (175 degrees C).
2 In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
3 Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

I don't have the exact measurements in front of me, but here it goes:

1lb of ground beef or turkey
1 packet of dry onion soup mix
2 eggs
1 cup of tomatoe sauce or ketchup
3/4 cup(?) dried oats
1 onion chopped
1 tsp. of garlic powder
bacon (optional)

Mix all the ingredients together in a bowl. Shape into a loaf in a pan. Can top with bacon if desired.
