I posted this a while back for Jennbaby.

Ok...This is what I usually do, instead of heavy cream I use fat free half and half (less oily) and 3/4 of a stick of butter. In a small sauce pan I let this simmer a little and it will get a little thick while stirring. In the meantime you boil the pasta. After the pasta is done put it back in the pot and you can now throw in the sauce. I usually add the parmesan cheese after because this way I can figure how much I need while I mix it all in. After that a little salt and fresh ground pepper to taste.

If you are confused let me know because I am not good at giving directions.

This literally takes 15 minutes from the moment the water for the pasta startes boiling.

This is for 1lb of pasta.

A good Alfredo sauce is all about the parmesan cheese you use.

That sounds so easy. What type of Parm cheese did u use. Also if I wanted to add some mushrooms or peas...when would I add them. Do you use any other seasonings?

thanks

Well this is just the basic Alfredo sauce recipe. I usually add the parmesan cheese after adding the sauce of milk and butter. You can add the parm cheese to the sauce beforehand but sometimes it will be too thick. Adding the parm cheese afterwards you get to see how much of it you need and how thick you want it. Then you would add the salt and pepper.

If you want to add mush or peas I would add it already cooked in the sauce when thickened.

To be honest the parm cheese I use comes from my FIL's pizzeria which is really good. He grates it himself at the pizzeria but I don't know exactly what kind.

If I have to buy at the supermarket I usually buy the imported cheese in that section where all the imported cheeses are.
