You can do it whenever you want. You can wait until your final head count and base your donation from that or just pick a certain amount and do it now.
Most charities you can donate right on-line

Do it whenever. The earlier the better since its one less thing to get done.

You can do it whenever, but if you are going to get cards printed up from the charity then you should do it soon. I did mine about a mont before the wedding. It was quick and simple. We donated to ACS.
