If you're going to Maui, definitely do the Road to Hana. While you're there, swim in the cave pool at Pa'iloa Bay at Wai'anapanapa State Park near Hana. It was such an amazing experience.

In Maui, I prefer the north road to the Road to Hana (but if you there for a week, do both). Just make sure you drive really carefully as the north road is a lot of cliffs (great views) and sharp turns (honk!).
The food in Maui was quite good..our favorite meal was at Roys. If you are a seafood lover, Nicks Fishouse is great.
If you are going during whale watching season, take a day trip out on a small raft boat. The whales sometimes are close enough to touch!
