I inadvertently wrote on my seating chart that there were 10 people at a table rather than 9 and got stuck paying for an extra person who doesn't exist

thats annoying... you should tell the RH so they do not set up the extra place setting. Otherwise it will look like you have a no-show. And ask if they can pack up some goodies for you to take home to compensate.
