We actually have an appetizer, salad, pasta, & main course.

This and the viennese hour. I think food is a big part of the wedding. There is still plenty of time for dancing

Ours is a salad/appetizer duet, followed by an intermezzo course, then dinner, and then Viennese/dessert.

This! Makes sense since we have the same venue lol.

Duet vs. 3 Courses?

My BM told me that the only reason venues offer a duet is to save themselves the time plating a third course. He said that it really doesn't take much more time away from dancing. We haven't made a decision yet though.

I know, I'm super helpful. LOL

This is for sure. It saves the Venue an extra round. With a duet, they don't serve a double helping on one plate, just one serving of whatever.

IMO a duet will add slightly more dancing time though.... What can save evem more time is to have the salad or first course Pre-served on the tables before people are seated. Then, mid-toasts, after or whatever the 2nd course can be served. Main Course being the 3rd.... I have to check what the heck is in my contract now!?! Haha

Duet vs. 3 Courses?

We are going to stick with the 3 course meal, even though the duet was offered. I wasn't a big fan of the options offered on the duet courses by the venue, while I liked the individual appetizer and salad options offered. I was strongly debating between the duet or three course meal though, and I'm sure either option would've been fine.
