I would offer chicken as the third entree. There are definitely people who don't like fish or beef.

Its nice that you want to have a different meal but there are people that don't like fish and will not eat beef. I think that you will have to offer a chicken dish for you guests.

I agree with everyone, I would personally pick a chicken dish. But to be different offer the chilean sea bass.

At almost every wedding they offer filet and salmon. the sea bass would be a different twist.
