E-Party helpppp!

E-Party helpppp!

So for our e-party, the hall we are having it in is providing some food, and my FFIL+FSMIL are going to be cooking some dishes as well. There are going to be carving stations, a seafood pasta, and some kind of lemon chicken for the meat eaters. As far as I know there will also be a mashed potato of sorts, and probably some kind of a vegetable. There will also be eggplant parm.

My FSMIL is making pene a la vodka.

I want to bring something, and here's where I need help! I am a vegetarian. And, I don't really enjoy eggplant parm, at all (I will eat it if I have to but the seeds give me the creeps... I am cringing right now thinking about it lol). I am not sure if the pasta that they are making will be made with prosciutto (I am assuming it will, FH's family is pretty italian). SO... I kind of want to bring something that I can eat, so that I don't have to eat mashed potatoes for dinner (and sometimes THOSE aren't even vegetarian... lol). I wanted to make a vegetable lasagna but I am worried about offending them by bringing something so 'substantial' as opposed to like a side dish. I'm having difficulty thinking of things that I could make that could easily be produced for ~75 people. I was trying to think of something with zucchini since FH and I both love it. I was thinking of something like this... what do you think? Does anyone have any suggestions/advice?

Re: E-Party helpppp!

I was just at a party this past weekend and someone made Panko crusted Zucchini. You cut the zucchini in rounds, dip in milk and egg wash, then dip in Panko crumbs and bake 15 mins on each side, at 375.

Flip in middle, so total cook time is 30 mins. It was good, and served with some peppercorn dressing for a kick!

Or, maybe make a cold appetizer that you can have along with some other Veggie friendly sides like the potaotes.

I make a killer Taco Dip. FM for recipe if interested.

This sounds SOOO good, but do you think it would take forever and a day to make this for a crowd of 75?

Also your dip sounds like it would be killer, but I feel like it would clash with the pre-existing exclusively-italian fare lol. But I would like the recipe anyway, I love me some bean dip!

What about pasta with a primavera sauce?

Is 3 pasta dishes too much??? If not, I am sold. lol

There's no such thing as too many pasta dishes! Pesto is another option.

So it sounds like more pasta is OK???? (In addition to the penne vodka and the pasta+seafood dish?)

If so, baked ziti is my favorite food ever... so I may just do that.... although my grandma has a killer mac n cheese recipe and I bet the kids would appreciate it too!

I went to a restaurant once where they had zucchini shredded longways like spaghetti and topped it with pasta sauce - it was amazing!!!! you can never have too many 'pasta' options!

Ohhh I make that! It's delish but it takes like 10 mins to shred one zucchini with the julienne tool I have lol. Maybe if I made a bunch of that and mixed it with angel hair?

Thanks girls! Pasta may be the winner. lol

How can anyone go wrong with pasta. I love the sound of baked ziti or mac n cheese. Both are easy to do for a large amount of people.
