Re: Empanadas (sp?)

Here ya' go Suzanne, these are OUTTA THIS WORLD!

Empanadas

10 white Goya discos (found in your freezer section of the supermarket)
1 lb. of chopped meat
1 clove of garlic
1 small onion (two slices, diced small)
1 green pepper (1 quarter, diced small)
1 red pepper (1 quarter, diced small)
a few olives (sliced in half, pimento included)
2 packets of Accent Sazon con culantro y achiote
1 packet of Goya chicken broth powder
onion power (a good sprinkle to cover lightly)
goya adobo (a good sprinkle to cover lightly)

- Thaw out the discos one-hour before you start
- Place the chop meat in a large skillet (heat on medium), add the garlic, onions, red and green pepper, and olives
- Stir until beef turns brown and juice develops (a few minutes)

- Add the powdered ingredients, stir nicely, be sure every area is seasoned
- Let heat a little bit, let stand on low for a few minutes
- Turn the oven to 350
- Take the discos one at a time, scoop either 1 ladle full, or two tablespoons of filling. Place filling in middle of discos, fold over
- Fork the edges together, continue till done
(you should have some meat left over - not much though)

- Spray a baking pan with Pam Non Fat spray
- Lay the empanadas in the pan, a little distance between each

- Place in oven for about 10 minutes
- Flip empanadas over and let brown on other side, cook till each side is a light gold, tan color
- Let cool a few minutes, dig in

(if you have or make extra filling, I find that it freezes well. so you are ready to fill, heat and eat at any time!)

Now thats a good recipe for Empanadas...I make them almost the same way.

If you want you can put mozzarella and that 4 mexican shredded cheese in with the chop meat. So so good.

Re: Empanadas (sp?)

I made these the other night and they were easy and good. Just a question....I drained the meat before I stuffed the discos and I noticed the filling was a little dry after it was baked. Should I have not drained the meat?
